I am losing water out of the Radiator - booked in for service
Then today the Boot Lock mechanism is busted - cannot open the Boot

Is this standard quality for the RCZ - is it time to get shut?

No more so than any other car. You can have problems with any marque.

I'm sure the dealer will sort out your issues.

How long have you had your car?

Water out the radiator is likely a loose hose. Jubilee clip needing a tighten.

I'm sure I've read another thread with the same issue on the boot and it was fixed by the dealership

Boot switch is know to be an issue, it is changed under warranty. Only thing is that the whole of the rear bumper has to come off to change the switch.
I've had mine changed as water gets into the switch, you are lucky that only the boot is affected, when mine went faulty it was causing all sorts of probs with the cars electrics.
Apparently theres a minor modification that is done on the new boot switch to stop water getting inside it.

As for the rad leaking, it could well be just a loose hose.
